Super Wedges Covered with Prosciutto

Ingredients:

Ingredients for the Pesto Sauce:

  • 2 cups fresh basil leaves
  • 2 garlic cloves
  • 1/2 Pecorino cheese cup
  • 1/4 cup toasted pine nuts
  • 1/2 cup of extra virgin olive oil
  • Salt and pepper

Ingredients for the wrapped wedges:

  • 24 Super Wedges fries
  • 6 slices of prosciutto, each cut into 4 strips
  • 6 medium balls of mozzarella cheese, each cut into 4 slices
  • 1/4 cup fresh basil leaves
  • 1 tablespoon extra virgin olive oil
  • Fresh ground pepper
  • 1/2 cup basil pesto

Instructions:

Sauce Instructions:

  • Place the basil, garlic, cheese, and pine nuts in a food processor and pulse until finely chopped and uniform.
  • While the food processor is running, pour in olive oil until fully incorporated.
  • Season with salt and pepper to taste.

Instructions for the fries:

  • Cook McCain Super Wedges in the Oven at 425 F/218 C for 12 minutes or in the AirFryer at 350 F/176 C for 10-12 minutes.
  • Place a slice of mozzarella cheese in the center of one slice and wrap with a slice of prosciutto. Repeat with the remaining slices.
  • Arrange the wrapped slices on a serving tray. Drizzle with olive oil. Garnish with basil leaves and fresh cracked pepper.
