Super Wedges Covered with Prosciutto

Ingredients:
Ingredients for the Pesto Sauce:
- 2 cups fresh basil leaves
- 2 garlic cloves
- 1/2 Pecorino cheese cup
- 1/4 cup toasted pine nuts
- 1/2 cup of extra virgin olive oil
- Salt and pepper
Ingredients for the wrapped wedges:
- 24 Super Wedges fries
- 6 slices of prosciutto, each cut into 4 strips
- 6 medium balls of mozzarella cheese, each cut into 4 slices
- 1/4 cup fresh basil leaves
- 1 tablespoon extra virgin olive oil
- Fresh ground pepper
- 1/2 cup basil pesto

Sauce Instructions:
- Place the basil, garlic, cheese, and pine nuts in a food processor and pulse until finely chopped and uniform.
- While the food processor is running, pour in olive oil until fully incorporated.
- Season with salt and pepper to taste.
Instructions for the fries:
- Cook McCain Super Wedges in the Oven at 425 F/218 C for 12 minutes or in the AirFryer at 350 F/176 C for 10-12 minutes.
- Place a slice of mozzarella cheese in the center of one slice and wrap with a slice of prosciutto. Repeat with the remaining slices.
- Arrange the wrapped slices on a serving tray. Drizzle with olive oil. Garnish with basil leaves and fresh cracked pepper.
