Hashbrown with Sunny-Side-Up Egg and Ranchera Sauce

Ingredients:

• 2 McCain Hashbrowns
• 2 eggs
• 1 tomato, ¼ onion, 1 garlic clove, ¼ bell pepper
• Fresh cilantro, crumbled cheese, and chopped scallions (optional)

Directions:

1. Cook McCain Hashbrowns according to package instructions.
2. Make the sauce: blend tomato, onion, garlic, and bell pepper, then simmer for 5 minutes.
3. Fry the eggs sunny-side-up.
4. Serve hashbrown topped with egg and hot ranchera sauce. Finish with cheese and
scallions.
